Winter Workweek Dinner Menu
Meal planning is a forte of mine, so I’m here to share last week’s menu with you in the hopes that it provides you with some inspiration!
Tuesday
Steak, Peppery Goat Cheese Mac, Salads
Since I had the day off and Joe had to take an exam for work, I decided I had both the time and the reason to make a special dinner! I made my famous “peppery goat cheese mac,” started us off with salads, and cooked steaks in the Sous Vie cooker.
Wednesday
Blackened Chicken and citrus salads
I was teaching until a bit later, but when I got home, I still had the energy to cook. This recipe requires very little prep time. Once the chicken is done cooking, you’re pretty much all set. It’s the perfect dish if you’re looking for the flavors of summer in winter too! Here is the recipe on Instagram reels!
Thursday & FRiday
Shepherd’s pie
I can’t share the recipe for this one yet (it will be a Saint Patrick’s week release!), but I can tell you that this is the most special comfort food dinner. I had very little happening that evening, so I was able to spend the necessary time on prep, and BOY! It was worth it. Super delicious and yielded lots of leftovers.
Saturday
Pizza!
Our last workday of the week is Saturday, so I like to make something special on certain weeks. Pizzas are perfect because we can be in the kitchen together, but they don’t require tons of skill and focus to make. I pick up the dough balls from Aldi’s deli section (they are literally $2 a pop), cook up some ground pork sausage, load on the sauce and the goat cheese. I usually make 2 for the both of us, and we have lunch leftovers for a few days. PRO TIP: Heat up leftover pizza in your air fryer. The microwave ruins leftover pizza if you ask me!

Meal planning is both a talent and a skill. It requires creativity and cooking talent, but it also takes organizational skills and loads of experience. Thankfully, before I became a wife and homemaker, I had lots of practice. Doing the grocery shopping and cooking while I lived with my parents was my “rent.” As a result, I’ve really honed those skills. I’ve put together my top four tips for successful meal planning to avoid financial and food waste in this video. I’ve developed a very unique, yet realistic approach.
