A Tuscan Inspired Meal

When I was in Italy for a month, I went out to dinner every night. I ate indoors twice. Maybe…

If given the choice to be outside or inside, I will always choose outside…weather permitting, of course. This Sunday, I decided to set up dinner outside and take advantage of the first time in weeks Pittsburgh has felt 70 degrees. I just graduated from my Master’s program, and I live with my parents. I cook dinner a few nights a week for all of us, and sometimes, I go all out. I had a bit of time after church, so I decided to visit a specialty grocer to see if anything sparked my imagination for dinner. Sure enough, I saw a bundle of Tuscan Kale in the produce section. My dad’s favorite thing to order at any Italian restaurant is “greens and beans.” This summer, I’ll be on the road for a bunch of singing things, so I’m savoring the family time. If the last year has brought you back home, I hope you can see the extra time with family as a blessing, even if you had setbacks or disappointments in other areas. Remember, God is good. All the time.
