Flax Seed Almond Butter Energy Bites
These should be called my “famous” flax seed almond butter energy bites, because they are well known among my friends. I’ve brought them to work to share, I made them on a singing contract for my roommates, and I even gave a batch to my husband on our second date.
They are impressive because they are super nutritious and also delicious. They are packed full of super foods like flax, chia, pumpkin seeds, and raw honey. Not to mention, you definitely get a boost of energy from eating these. They are made in one bowl, and take 15 minutes to put together—tops.
You can also make these your own by adding or swapping some of the ingredients. Almond butter can be swapped for any nut butter. Chia seeds can be swapped for hemp (which is a great sub if you’re looking for even more protein!) Honey can be swapped for maple syrup. I’ve made these a variety of ways with a variety of swaps, but everyone has always requested the OG.
And I’m inclined to give the people what they want. So, without further ado, here are all the ingredients and instructions that you need to make the best energy bites you’ve ever had.
Flax Seed Almond butter

large mixing bowl
freezer and/or fridge
Ingredients
1/2 cup ground flax seed
1/4 cup chia seed
1/4 cup roasted pumpkin seeds (I use pepitas from Aldi)
1/2-3/4 cup almond butter
1/4 cup raw honey
1/4 cup dark chocolate chips
Instructions
Add your dry ingredients (excluding chocolate chips) to your mixing bowl. Mix the flax, chia seeds, and pumpkin seeds, so that the mixture appears uniform.
Add your almond butter and honey simultaneously. Mix this together. You will have to fold the wet ingredients in for a long time in order to get everything to conglomerate. You may have to add a bit more almond butter or honey to the mixture depending on how dry your milled flax seed is. When I use Bob’s Red Mill, I need extra almond butter and honey, but when I use the generic from Walmart, I need less.
One the mixture is uniform, fold in the chocolate chips.
Scoop spoonfuls of the mixture of your desired size ( I always eyeball this) and roll them between your hands to form a ball.
Place each ball in a container. If you’re looking to set them quickly to eat them quickly, place them in the freezer for 20 minutes. Otherwise, you can store them in the refrigerator.
